This week on Feature Fare we highlight an absolutely delicious Vegan Curry Stew that the whole family will enjoy. Healthy fresh and delicious this recipe contains ingredients you can find at Urban Fare.
Vegan Curry Stew
1 Med Onion
2 diced Potatoes
2 Med Carrots
½ Head Cauliflower
3 Stalks Celery
4 Spears Asparagus
2 Bell Peppers /Color is your preference
1 Can Corn Niblets Frozen Will do
1 Can Black Beans
1 Can Chic Peas
1 Cup Frozen Peas
For the Curry Sauce
Use your favorite Curry Paste or in a frying pan over low heat until aromas appear in your kitchen
How to prepare:
Cut all Vegetables to your preference. All should be approx. the same size
Saute in your favorite oil Celery Carrots Onions til sweaty. Add curry sauce or powders. Stir.
Stir in 1 to 2 Cans of Coconut Milk and 1 cup of Veggie stock(optional)
Add Potatoes and Simmer for about 15 mins
Add all other Veggies/Beans, Chic Peas,Corn and Peas and simmer for 10 more mins or until potatoes are done. Season with Salt and Pepper and serve over your favorite Rice.
